Vegan Pulled-Pork Tostadas
Ingredients:
Won Ton small wrappers (Nasoya brand or any)
Vegan pulled pork (Gardein brand)
Mozzarella veggie shreds
Romaine lettuce
Homemade Pico De Gallo (Salsa: roma tomatoes, shallots, green onions, garlic, cilantro, fresh jalapeno (half), spanish extra virgin olive oil, lemon and season to taste: sea salt & pepper)
Directions for Salsa:
Chop Roma Tomatoes and Cilantro
Mince Shallots, Garlic, Green Onions, Jalapeno
Mix together in a bowl, then add freshly squeezed lemon juice, and season to taste
Directions:
Fry wonton wrappers in Vegetable Oil, or any that you prefer (set aside on paper towel, to soak excess oil)
Cook pulled-pork (no need to season, already seasoned in bbq sauce)
Top fried won ton wrappers with pulled pork, chopped romaine lettuce, mozz cheese, and pico de gallo
